Ingredients for Apple Cinnamon Muffin Tart: Low-gluten flour 60g, milk 100g, sugar 8-15g, baking powder 2g, eggs 2, apple powder 15g, cinnamon powder a pinch, rum 10ml, fruits/jam as desired, maple syrup/yogurt as desired, lemon juice a few drops.
Method: Step 1: Prepare the ingredients. Choose your preferred fruits or jams, and cut them into small pieces in advance. Step 2: Mix low-gluten flour, apple powder, cinnamon powder, baking powder, rum, milk, and sugar until you get a smooth batter without lumps. If preparing jam or desiring a low-fat version, sugar can be reduced from 15g to 8g, and can be adjusted according to personal taste. Step 3: Whip the eggs for 5-6 minutes until they are smooth and frothy, adding lemon juice halfway.
Step 4: Combine the batter with the egg mixture, and gently fold them together with a spatula. Step 5: Use a non-stick pan without oil. Once the pan is hot, add a tablespoon of batter and cook over low heat until both sides are golden brown. Count 70 numbers for the first side, flip, and count 40 numbers before removing from the pan. Work quickly to avoid burning. It is recommended to cook one at a time.
Step 6: Place the cooked muffins with fruits/jam, or with cream, Greek yogurt, or other preferred fillings. Finally, drizzle with maple syrup or decorate with yogurt.
Cooking Tips for Apple Cinnamon Muffin Tart: Adjust the sugar quantity in the muffins based on the sweetness of the filling. Muffins with jam should have reduced sugar to avoid excessive sweetness. For a low-fat version, use less sugar and sugar-free Greek yogurt as filling.
